All about foods

Hello blogger world!

Foods brings us happiness, it makes us forget about the world for awhile. Sweet and savory foods attract me the most. Since im in my semester break, i have nothing to do, only doing house chores everyday...watch food channel on tv everyday then my passion for food makin menjadi-jadi pula. I love every food channel in Astro, but on top of it is Food Network Channel. I wanna be like them someday, be a celebrity chef =b *i hope so*. I fell on this women celebrity chef,(my fav chef so far) Giada De Laurentiis, her cooking shows "Giada at Home". She's pretty, stylish and make simple and delish recipe. Never fail to attract the audiences to watch it until the end of her show. She got the package. There's many shows that i like stars by all awesome Chef like Paula Deen, Sunny Anderson, Rachel Ray and Aaron Sanchez.

We just need to know what we want to do with our life and our goals. Most important is believe in ourselves.

Le meringue!

Hello blogger world!

Meringue is one of the important part and steps in making Macarons. The quantity and quality that we must shud take care of. Okay, there's two different type of meringue, French meringue and Italian meringue.



French Meringue :

Ze ingredients :

White eggs 90 grams
Caster sugar 30 grams

Ze steps: ( There are two steps that i know)

Method 1 :
1. Double boil ONLY white eggs in the saucepan until its lukewarm
2. Transfer the lukewarm egg whites into the mixing bowl. Beat until form a foam.
3. Gradually add caster sugar spoon by spoon until the mixture turns into glossy & shiny white meringue.
4. Turn upside down the mixing bowl, if the meringue not fall out, its ready to use.

Method 2 :
1. Double boil white eggs and caster sugar until its luke warm.
2. Transfer the lukewarm white eggs+dissolve caster sugar into a mixing bowl.
3.Beat until it turns into glossy and shiny white meringue.
4. Turn upside down the mixing bowl, if the meringue not fall out, its ready to use.


Italian Meringue:

Ze ingredients:

White eggs 120 grams
Caster sugar 150 grams
Water 50 grams

Ze steps :

1. Divide equally the egg whites. In this meringue we only use 60 grams of egg whites bcs half of it will be mix in the almond+sugar mixture.
2.Beat the 60 grams egg whites in a mixing bowl until its form a foam.
3. Put caster sugar in a saucepan then pour the water.
4. Place a candy thermometer beside the saucepan.
5. Bring to boil until the sugar dissolve and reach 180 C. (sugar syrup)
6.After the sugar syrup reach 180 C quickly transfer it into the beateb egg whites. Continue beating until the mixture turns into glossy & shiny white meringue.
7. Then its ready to use.



The difference between French Meringue and Italian meringue is, Italian meringue will produce more product compare to French meringue. Ask me if u have any ques, i'll try to help. =) Much love.

Le Macaron recipe

Today i will show you how to make le macarons. I hope i can help you.The recipe i will show you guys is not taken from the Laduree recipe, i just learn from books, blogs, videos and other macarons sites. I use the easier method since i failed so many times.

Basic Macaron Ingredients :
  • Ground almond 110 grams
  • Icing sugar 200 grams
  • Caster sugar 30 grams
  • White eggs 90 grams
  • Food colouring ( 2-3 drops if u want a light color)
For the butter cream fillings :
  • Egg yolks 90 grams
  • Icing sugar 90 grams
  • Butter (softened) 90 grams
  • Water 10 grams
  • Any flavor jam 1/2 cups ( i used strawberry jam)
Le steps : 

1. Campurkan putih telur dan gula caster dalam periuk dan panaskan secara double-boiler hingga gula hancur. Kacau tanpa henti.



2. Setelah gula larut, tuangkan campuran ke dalam mixing bowl dan putarkan pada kelajuan sedehana selama 5 minit sehingga adunan sejuk. Selepas 5 minit tukar kelajuan pada kelajuan tinggi dan pukul sehingga kembang. ( french meringue)


3. Campurkan pewarna ke dalam campuran (2) dan pukul sehingga warna sebati.




4. Ayak icing sugar dgn ground almond, kemudian campurkan almond-icing mixed ke dalam campuran (3).

5. Gaulkan perlahan dengan spatula sehingga sebati. *remember beat slowly using folding method, minimum 40 times beating the mixture*



6. Tuangkan macaron mixture ke dalam piping bag dan paipkan di atas dulang pembakar dilapisi dgn baking paper. Pipe around 2-3 cm away every each piped.




7. Let it dry for 30 minutes until the skin is form.


while waiting it for dry, buang masa take pic main sma budak2... petang2 kan... =)


Okay 30 mins is over!



8. Bakar selama 10-13 minit. 5 minit pertama pada suhu 150 C dan minit seterusnya pada suhu 130 C.


9. Setelah masak, biarkan sejuk dalam room temperature kemudian pipe buttercream filling dan tutup dgn macaron yg satu lagi mengikut size. (like sandwich) 


 yeah, a lil bit burnt sbb takin pic seja...


Yeah. i didnt filled it with buttercream. Lazy to make it sbb maw cuci mixing bowl lagi. So, ended up using the jam but still good tho. =)

p/s: My macaron problems was the batter that too thick and late dropping. That's why my macaron shell x soft and smooth. It shud be a grad A eggs, i think i didnt use grad A eggs sbb x maw membazir, guna jak telur d rumah ne. Next time shud check.
This is my not so perfect macarons. i've already tlaked abt my 4th attempt in my previous post. So, if u want a perfect macaron, help urself find it in web and u'll go crazy. Later i'll show the difference between French meringue and Italian meringue.

Macaron!

Okay today i'm gonna post about le macaron. What is macaron? (for those who don't know). Let's start from its history and origins. As i know, it came from PARIS where all the sweet and romantic things been living for century. I wish i can go there someday with my beloved one. =). 


There're many other macarons type in Paris, but nothing compares to The Laduree french macarons. Its the most famous macaron brand around the world and i've known this macaron brand from a tv series called GOSSIP GIRLS where the pretty actress Leighton Meester act as Blair Waldorf. There's a scene where she opened the Laduree macaron box and ate the green tea macarons deliciously and bite it softly. I wondered to myself how it would taste and the texture of the macarons. 



So, i've been craving for it and thinking where the hell i can get macaron around Malaysia. I've been searching the net crazily abt macaron and then i read somewhere on people blogs, there's macaron sell in Malaysia but it was at Pavi. Since i live and study here in Sabah, i dont hv the chance to go there. So, i hold my temptation just by looking at all macarons pictures.

But, fortunately, there's a news abt macarons sell at Starbucks CP, KK. If i'm not mistaken it was last March or April. They got macarons in their menu. Since i've been craving for it so much, i went for it and bought only two macarons since it was RM4.50 each. It was so small and not really look like the macaron that i knew. But i dont care cuhs i really want to know how it'll taste and its texture. My first bite was like " Oh, macam biasa jak bha ne, macam pernah rasa pula". It was crunchy on the outside(the shell) and gooey in the inside. That Starbuck macarons dont have the macaron so-called "feet" and the choc ganache filling was so thick and the macaron shell was petite and thin, so, maybe that's why i didn't get the real taste of macaron and not feel satisfied.


Starbuck got macaron on their menu only for a week bcs it was only a promotion. Then, i'm thinking, macam mana la maw dpt macaron lagi.. sudah la mahal.. susah lagi maw cari.. So, i decided wanna give a try to make it. I'm searching for macaron recipes and tutorials step by step on how to make it. There's a lot of macaron steps and recipes and its hard to choose which one is the best. Then, after watched so much videos and recipe, my first attempt to make it was not so perfect like in the picture. The macaron "feet" not grow. Then, i keep trying and trying and trying but all was completely fail!! 3 times fail ok! Sampai give up aku ah.. Bnyk cash burnt lagi... So, i stopped making macaron. Tunggu duit ada baru buat lagi.

Another lucky day yesterday, dad gave me money sbb dia kesian aku duduk rumah spnjng cuti jk kan, so then i use that money to buy my macaron ingedients. Aku pun pi la bwat macaron. I tried french meringue recipes bcs it was easy then italian meringue where there's a lot of work to do. It was my 4th attempt making macarons and it was ok. The macaron "feet" was grew but not like as i hoping for. Now i know what to do to make it more perfect since i read a lot of macaron to-do's and not-to-do's.Yeah, I'm a macaron nerd.
